When I first heard about this charming spot on Mott Street, helmed by former Per Se pastry chef Susanna Yoon, I knew I had to experience it for myself. It’s not just a chocolate shop; it’s a destination for anyone who appreciates meticulous craftsmanship and delightful flavors.

Walking into Stick With Me Sweets feels like stepping into a jewel box. The exposed white brick walls create a sophisticated backdrop for the vibrant, cheerful packaging that immediately catches the eye. Chef Yoon drew inspiration from Wes Anderson's whimsical aesthetic, particularly The Grand Budapest Hotel, and you can see it in the playful yet elegant color palette. It’s bright, it’s fun, and it perfectly sets the stage for the treasures within.

And what treasures they are. The bonbons here are unlike anything I've encountered. They are, quite literally, edible works of art. Chef Yoon uses a variety of techniques – splatter painting, airbrushing, delicate brushstrokes – with colored cocoa butters to adorn each bonbon. The effect is stunning, creating beautiful, paint-like finishes that subtly hint at the flavors inside. It’s a visual feast before you even take a bite.

But the artistry doesn't stop at the surface. What truly sets these bonbons apart is their layered fillings. Unlike traditional truffles with a single, soft center, Chef Yoon meticulously crafts each component of the filling separately, then layers them within the chocolate shell. This means each bite offers an exciting symphony of textures and tastes. Take the Speculoos S'more, for instance: you get the satisfying crunch of a tiny speculoos cookie beneath a fluffy marshmallow layer. Or the Créme Fraîche Strawberry, which offered a light, refreshing, almost cheesecake-like filling that was simply divine.

Even the display cases are a testament to thoughtful design. Crafted by Grain and Gatherings, these unique wooden stands are set at varying heights, ensuring each flavor gets its moment in the spotlight. It’s clear that every detail has been considered.

Beyond the star bonbons, Stick With Me Sweets offers a delightful array of other handcrafted treats. Handmade fudge, caramels, nougat, dulce milk jam – the menu is a testament to Chef Yoon's versatility. I even tried a raspberry caramel, which, despite my usual reservations about raspberry, I found utterly captivating. It was perfectly smooth, not sticky at all, and the raspberry flavor was bright and juicy without being overpowering. A true revelation.

And for those who appreciate the classics, Chef Yoon also offers traditional truffles, ensuring there’s something for every palate.

The shop’s layout also offers a unique glimpse into the creative process. The kitchen is separated from the retail space by glass, allowing visitors to watch Chef Yoon at work – tempering chocolate, pouring shells, and assembling the intricate fillings. It’s a fascinating peek behind the curtain, revealing the dedication and skill involved.

I was fortunate enough to get a closer look at the kitchen, and it was an eye-opening experience. The creation of these bonbons is a three-day endeavor. One day is dedicated to crafting the chocolate shells, which are then carefully set in a temperature- and humidity-controlled environment. Another day is spent preparing the diverse filling components, and the final day involves filling and capping the bonbons. The ingredients are top-notch, sourced from around the globe – from Japanese yuzu to local bananas – and you can truly taste the difference. Chef Yoon’s flavor combinations are adventurous and fun, but most importantly, they are flavors she genuinely loves to eat, which makes all the difference.

And then there are the book-shaped gift boxes. They are utterly charming, a perfect vessel for the bonbons, and a delightful keepsake afterward, ideal for storing jewelry or other small treasures. Available in boxes of 6, 12, or 24, they make for an unforgettable gift for any sweet enthusiast.
